Pea and mint soup with Salad Pea

A fresh and aromatic soup with the delicate flavor of Salad Pea and a hint of Kaffir Lime.

Ingredients

  • Salad Pea
  • Bean Blossom
  • Cucumber – lightly salted, finely diced
  • Peas – fresh or frozen
  • Snow peas – briefly boiled and cut into pieces
  • Vegetable stock – homemade or from a cube
  • Fresh mint – to taste
  • Kaffir Lime Leaves oil – a few drops as a finishing touch
  • Kaffir Lime Leaves powder – a pinch as an extra seasoning

Method

  • Slice the cucumber thinly and sprinkle lightly with salt.
  • Blanch the snow peas briefly, then cut them into pieces.
  • Bring the vegetable stock to the boil, add the peas and cook for a few minutes until tender.
  • Add the mint, puree the soup until smooth and pass through a fine sieve.
  • Pour the soup into bowls.
  • Garnish with Salad Pea and Bean Blossom.
  • Add the salted cucumber and peas.
  • Drizzle the Kaffir Lime Leaves oil over the dish.
  • Lightly sprinkle with Kaffir Lime Leaves powder for extra flavor.
