Langoustine with Kaffir Lime Leaves Foam


  • Morar Shoots 
  • Sweet Peeper 
  • Sansho Leaves 
  • Kaffir Lime Leaves Powder (recipe)
  • Langoustine 
  • Kaffir Lime Leaves
  • Cream
  • Salt
  • Black pepper


  • Heat up the cream and infuse with Kaffir Lime Leaves.
  • Add salt and pepper as needed. 
  • Add this Kaffir Lime Leaves foam base to a siffone.
  • Spray the siffone with 1 cartridge.
  • Spray the Kaffir Lime Leaves foam generously onto the plate. 
  • Lightly sear the langoustine and place in the center of the plate. 
  • Dress the langoustine with Sweet Peeper and Morar Shoots.
  • Pick leaves from the Sansho Leaves and place around the langoustine on the foam. 
  • Sprinkle with Kaffir Lime Leaves Powder and serve.
