Quail eggs , avocado and egg noodles


(To make 4 portions)

  • 12g Algae powder Aventurine                    
  • 240g egg noodles                                                             
  • 12 pieces boiled and peeled quail eggs                   
  • 1 small avocado                                                 
  • 1 tbsp yuzu juice                                               
  • 1 tbsp extra virgin olive oil                                            
  • 1 tsp cider vinegar                                                           
  • 1 pinch salt


  • Cook and drain the egg noodles. 
  • Using a small bowl, make a dressing by mixing together the Yuzu juice, extra virgin olive oil, cider vinegar and pinch of salt. 
  • Peel and cut the avocado into wedges 
  • Place the cooked noodles in a large bowl with the yuzu dressing, fold gently and add half of the Algae powder and fold again. 
  • Toss the quail eggs into the rest of the algae and cut them in half. 
  • Dress the dish with all the ingredients and serve.  ​
