Quail eggs , avocado and egg noodles
Ingredients
(To make 4 portions)
- 12g Algae powder Aventurine
- 240g egg noodles
- 12 pieces boiled and peeled quail eggs
- 1 small avocado
- 1 tbsp yuzu juice
- 1 tbsp extra virgin olive oil
- 1 tsp cider vinegar
- 1 pinch salt
Method
- Cook and drain the egg noodles.
- Using a small bowl, make a dressing by mixing together the Yuzu juice, extra virgin olive oil, cider vinegar and pinch of salt.
- Peel and cut the avocado into wedges
- Place the cooked noodles in a large bowl with the yuzu dressing, fold gently and add half of the Algae powder and fold again.
- Toss the quail eggs into the rest of the algae and cut them in half.
- Dress the dish with all the ingredients and serve.
