Pumpkinsoup
Ingredients
- Pumpkin
- Potato
- Garlic
- Onion
- Ginger
- Tumeric
- Cinnamon
- Kummel/ (powder)
- Lemon (grater)
- Kaffir Lime Leaves
- Cardamom Leaves
- Vegetable stock
Garneren:
- Yogurt
- Avocado oil
- Shiso Purple
- Shiso Green
Method
- Slice the onion, garlic and ginger. Fruit this with Kaffir Lime Leaves and Cardamom Leaves in a little oil.
- Add the diced pumpkin and potatoes and cook it until it has a glance. Add the turmeric and the vegetable stock.
- Boil it all until cooked and blender it to the desired thickness.
- Garnish this tastefully in a bowl with the yoghurt and cress and drizzle some avocado oil.
