Ice cream from Mojito & Sechuan Buttons
Ingredients
Ice:
- 4 dl sugar water
- cup of Limon Cress
- 20 gr lemon grater
- 2.5 dl lemon juice
- 3 dl of sparkling water
- 0.5 dl rum
- 10 Sechuan Buttons®
Mozaic:
- Orange
- Apple
- Kiwi
- Apple Blossom
- Shiso Green
- Raspberry coulis
Method
- Take the cup of Limon Cress, cut the cress including the stems and boil this with the sugar water (cane sugar).
- Let this cool in the ice water!
- Grind the Sechuan Buttons® and rum with the hand blender as fine as possible and mix it with the lime zest, lime juice, sparkling water and the sugar water. Strain it through a fine sieve and turn it into a nice fine sorbet.
- Make a mosaic of the orange, apple, kiwi and surround it with the Apple Blossom, Shiso Green and raspberry coulis.
- Spoon a nice quenelle of the sorbet on the mosaic.
