Ingredients

  • Gelatin leaves
  • Muscat wine
  • Sugared lemon zest
  • Danish pastry
  • Raspberry
  • Blueberry
  • Currant
  • Gooseberry
  • Sansho Leaves
  • Apple Blossom
  • Kaffir Lime Leaves
  • Limon Cress

Method

  • Make a jelly of apple, lime and nutmeg wine
  • Add raspberry, blueberries, gooseberries, currants, Kaffir Lime Leaves, sugared lemon zest and picked Sansho Leaves
  • Place the bottom of the meringue on the plate
  • Place the filled jelly on top of this
  • Finish with Apple Blossom and serve
