- Honey
- Sugar
- Vinegar
- Beet
- Blueberry

Method
- Make a mousse of raspberry
- Drill balls of beet with the pariesenne drill and marinate in balsamic and honey
- Bake blind puff pastry
- Cut a larger round and a smaller round from the baked puff pastry
- Place the cookie on the plate
- Pipe the mousse on the cookie
- Place the marinated beet and blackberries
- Place a smaller cookie on top
- Add blueberries
- Finish the dessert with Codium Blue and Scarlet Cress
