Sunflower seeds, celeriac and cream
Ingredients
(For 4 portions)
- 200g sunflower seeds
- 500g celeriac
- salt
- lemon juice
- extra virgin olive oil
- soy sauce
- Anise Blossom
- Motti Cress
- Aclla Cress
Method
Boil the seeds in lightly salted water for 6-7 minutes then drain them. Prepare a cream with boiled celeriac, blended and seasoned with oil, salt, soy sauce and lemon juice. Put the celeriac cream and the cooked seeds in a saucepan, cream like a risotto on the wave, put on the plate and finish with Anise Blossom, Motti Cress and Aclla Cress.
