Poke Bowl with Watermelon, Smoked Carrot and Salad Pea

A fresh and flavorful vegan poke bowl with smoked carrot, Salad Pea and Shiso mayonnaise.

Ingredients

  • Sushi rice
  • Sushi vinegar
  • Watermelon – diced
  • Carrot – diced, smoked with soy
  • Salad Pea
  • Sauerkraut
  • Cucumber – diced
  • Soybeans – boiled or steamed
  • Sesame seeds – toasted
  • Vegan mayonnaise
  • Shiso Leaves Purple – finely chopped

Method

  • Cook the sushi rice according to the instructions on the package.
  • Mix with sushi vinegar and leave to cool.
  • Mix the vegan mayonnaise with finely chopped purple shiso leaves and set aside.
  • Dice the watermelon, cucumber and carrot.
  • Briefly smoke the carrot with soy for a deep flavor.
  • Fill a bowl with the sushi rice.
  • Divide the soy beans, watermelon, smoked carrot, sauerkraut and Salad Pea over the rice.
  • Sprinkle toasted sesame seeds over the bowl.
  • Pipe a small amount of Shiso mayonnaise in the center of the bowl and serve.
