Peking Duck, Pear and Shiso Purple

  • Peking duck sheets
  • Peking duck
  • Pear
  • Goat cheese
  • Sesame Seeds
  • Kaffir Lime Leaves
  • Sansho Leaves
  • Shiso Purple
  • Shiso Leaves Purple

Method

  • Fry sheets of peking duck sheets briefly.
  • Cut rounds from pear.
  • Cut leaves of Shiso Leaves Purple into a round shape.
  • Build the dish with deep-fried peking duck sheets, Shiso Leaves Purple, peking duck, pear and goat cheese.
  • Sprinkle powdered Kaffir Lime Leaves over the dish.
  • Place balls of pear with leaves of Sansho Leaves on the dish.
  • Finish with Shiso Purple and sesame seeds and serve.
