Lumina, Full Circle - recipe from Tivoli Amsterdam

Ingredients and method

Ingredients

  • 30ml Full Circle Shiso Green
  • 30ml Full Circle Gin
  • 20ml Lime juice
  • 30ml Ramazotti or other bitter aperitif
  • 10ml Simple Syrup
  • Barspoon of Shiso Purple Vinegar
  • 60ml Soy milkwash
  • Shiso oil

Method

  • Add the Full Circle Shiso Green, Full Circle Gin, Lime, Ramazotti, Simple Syrup, Shiso Purple Vinegar and Soya milk to the cocktail shaker and stir
  • Let it rest for an hour in the fridge
  • Use a cheesecloth to separate solids from the cocktail
  • Pour 90 ml back into the cocktail shaker, add ice and stir
  • Pour the cocktail into the cocktail glass using a strainer
  • Drizzle a few drops of Shiso oil on top of the cocktail

The milkwashed cocktail can be stored in a sealed bottle in the refrigerator for 3 weeks.

Shiso oil: Olive oil with shiso leaf. Blend and filter for a deep green oil.
