Lumina, Full Circle - recipe from Tivoli Amsterdam
Ingredients and method
Ingredients
- 30ml Full Circle Shiso Green
- 30ml Full Circle Gin
- 20ml Lime juice
- 30ml Ramazotti or other bitter aperitif
- 10ml Simple Syrup
- Barspoon of Shiso Purple Vinegar
- 60ml Soy milkwash
- Shiso oil
Method
- Add the Full Circle Shiso Green, Full Circle Gin, Lime, Ramazotti, Simple Syrup, Shiso Purple Vinegar and Soya milk to the cocktail shaker and stir
- Let it rest for an hour in the fridge
- Use a cheesecloth to separate solids from the cocktail
- Pour 90 ml back into the cocktail shaker, add ice and stir
- Pour the cocktail into the cocktail glass using a strainer
- Drizzle a few drops of Shiso oil on top of the cocktail
The milkwashed cocktail can be stored in a sealed bottle in the refrigerator for 3 weeks.
Shiso oil: Olive oil with shiso leaf. Blend and filter for a deep green oil.
