Crunchy Sushi Rice, Pistachio Pasta, White Chocolate Mousse and Blood Orange

  • Sushi Rice
  • Planofilia Green - Vanilla
  • Paztizz Tops
  • 250 gr pistachio nuts
  • Blood orange
  • Pistachio nuts
  • White chocolate

Method

  • Make a round of sushi rice and bake crispy
  • Cook Planifolia Green in sugar water
  • Make a paste of pistachio, olive oil, powdered sugar and the Planifolia Green cooked in sugar water
  • Mix some of the pistachio vanilla paste with white chocolate mousse
  • Lightly roast segments of blood orange
  • Make a crumble of baked white chocolate and pistachio
  • Place the crispy fried sushi rice on the plate
  • Spread the paste around the crispy sushi rice
  • Top with a quenelle of chocolate mousse
  • Finish the dish with the white chocolate and pistachio crumble, segments of blood orange and Paztizz Tops
