Codium Blue Mayonnaise
INGREDIENTS AND METHOD
Ingredients
- 2 egg yolks
- 2 tablespoons lemon juice
- 1 tablespoon worcestershire sauce
- 1 tablespoon of mustard
- 200 ml sunflower oil
- A handful of Codium Blue
Method
- Finely chop Codium Blue.
- Put the egg yolk in a tall measuring cup.
- Add mustard, worcestershire sauce and lemon juice.
- Mix briefly with the hand blender.
- Drizzle in sunflower oil little by little until it reaches the right consistency.
- Cover and store in the fridge until use.
Application
- Use the salty Codium Blue Mayonnaise with chips, vegetable tempura, snacks, fish dishes, steak tartare, etc.
