Codium Blue Mayonnaise

INGREDIENTS AND METHOD

Ingredients 

  • 2 egg yolks
  • 2 tablespoons lemon juice
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon of mustard
  • 200 ml sunflower oil
  • A handful of Codium Blue

Method

  • Finely chop Codium Blue.
  • Put the egg yolk in a tall measuring cup.
  • Add mustard, worcestershire sauce and lemon juice.
  • Mix briefly with the hand blender.
  • Drizzle in sunflower oil little by little until it reaches the right consistency.
  • Cover and store in the fridge until use.

Application

  • Use the salty Codium Blue Mayonnaise with chips, vegetable tempura, snacks, fish dishes, steak tartare, etc.
