Fresh Tofu, Kalaman Juice, Bonito Flakes, XO from Eryyngi- Maitake

Ingredients

  • Bicolor Mustard Cress
  • Tahoon Cress
  • Shiso Bicolor
  • Mustard Cress
  • Hummus Leaves
  • Gold sprayed Shiso Bicolor
  • Fresh tofu from Tofu Meisjes Rdam
  • Pinch of salt
  • Hijiki
  • 2 tbsp Aged soy 30 yrs Japan
  • 1 tbsp Kalamansi juice pure
  • 1,5 tbsp white sesame oil
  • 1 tbsp XO of Eryingi- maitake ( 500 grams Eryngi- Maitake, 500 grams shallot, 200 grams garlic, 150 grams muscovado sugar, 125 grams soy aged. )

Method

  • Place the fresh tofu on the plate.
  • Pour the aged soy over this. 
  • Build up the dish with the remaining ingredients and Koppert Cress products.
