- Bicolor Mustard Cress
- Tahoon Cress
- Shiso Bicolor
- Mustard Cress
- Hummus Leaves
- Gold sprayed Shiso Bicolor
- Fresh tofu from Tofu Meisjes Rdam
- Pinch of salt
- Hijiki
- 2 tbsp Aged soy 30 yrs Japan
- 1 tbsp Kalamansi juice pure
- 1,5 tbsp white sesame oil
- 1 tbsp XO of Eryingi- maitake ( 500 grams Eryngi- Maitake, 500 grams shallot, 200 grams garlic, 150 grams muscovado sugar, 125 grams soy aged. )
Method
- Place the fresh tofu on the plate.
- Pour the aged soy over this.
- Build up the dish with the remaining ingredients and Koppert Cress products.
