Crispy Sushi Rice, Smoked Eel, Lime and Codium Blue

Ingredients
- Bicolor Mustard Cress
- Shiso Bicolor
- Codium Blue
- Crispy fried sushi rice
- Fennel dressed in lime
- Parsnip cream
- Smoked eel
- Cucumber pickles
- Mayonnaise of shiso
- Oil of lime
Method
- Make a round of sushi rice and fry crispy
- Place the crispy fried sushi rice on the plate
- Pipe dots of parsnip cream on top
- Place the smoked slices of eel, sweet and sour cucumber and dressed fennel
- Pipe several more dollops of parsnip cream and several dollops of Shiso mayonnaise
- Place a bunch of Bicolor Mustard Cress along with Codium Blue and Shiso Bicolor on the dish
- Drizzle oil of lime over the dish and serve
