Crispy Sushi Rice, Smoked Eel, Lime and Codium Blue

Ingredients

  • Bicolor Mustard Cress
  • Shiso Bicolor
  • Codium Blue
  • Crispy fried sushi rice
  • Fennel dressed in lime
  • Parsnip cream
  • Smoked eel
  • Cucumber pickles
  • Mayonnaise of shiso
  • Oil of lime

Method

  • Make a round of sushi rice and fry crispy
  • Place the crispy fried sushi rice on the plate
  • Pipe dots of parsnip cream on top
  • Place the smoked slices of eel, sweet and sour cucumber and dressed fennel
  • Pipe several more dollops of parsnip cream and several dollops of Shiso mayonnaise
  • Place a bunch of Bicolor Mustard Cress along with Codium Blue and Shiso Bicolor on the dish
  • Drizzle oil of lime over the dish and serve
