Young Oyster Mushroom, Dashi & Lupine Tops

Ingredients

  • Young oyster mushrooms (whole)
  • Lupine Tops
  • Kombu
  • Shiso Leaves Green
  • Black tea
  • Lime

Method

  • Make a clear dashi by letting kombu and black tea simmer together in hot water (do not let it boil). Then add Shiso Leaves Green.
  • Season the broth to taste with a little lime juice and possibly some lime zest for freshness.
  • Strain the dashi and keep warm.
  • Clean the young oyster mushrooms.
  • Prepare them briefly (e.g. steam or lightly roast) to preserve their structure.
  • Decorate by sticking the Lupine Tops into the oyster mushrooms, as if they were growing out of them.
  • Place the oyster mushrooms with the Lupine Tops in the centre of the plate.
  • Carefully pour the warm dashi around and over the dish and serve.
