
Young Oyster Mushroom, Dashi & Lupine Tops

Ingredients
- Young oyster mushrooms (whole)
- Lupine Tops
- Kombu
- Shiso Leaves Green
- Black tea
- Lime
Method
- Make a clear dashi by letting kombu and black tea simmer together in hot water (do not let it boil). Then add Shiso Leaves Green.
- Season the broth to taste with a little lime juice and possibly some lime zest for freshness.
- Strain the dashi and keep warm.
- Clean the young oyster mushrooms.
- Prepare them briefly (e.g. steam or lightly roast) to preserve their structure.
- Decorate by sticking the Lupine Tops into the oyster mushrooms, as if they were growing out of them.
- Place the oyster mushrooms with the Lupine Tops in the centre of the plate.
- Carefully pour the warm dashi around and over the dish and serve.
