Tomato ginger soup with RucolaCress

  • 1.2kg of tomatoes
  • 1 winter carrot
  • 1 piece of ginger (about 2 cm)
  • 2 stalks of celery
  • 3-5 shallots
  • 1 cup of RucolaCress®
  • 1 tsp Chili flakes
  • 10 stalks of thyme
  • 2.5 tablespoons of mascarpone


Cut the shallots, tomatoes and celery. Grate the ginger and the carrot roughly and add all ingredients to a soup pot. Add 100 ml of water and cook for about 25 minutes. Add the thyme and 1 teaspoon chilli flakes to the soup during cooking. Add the mascarpone after 25 minutes and remove the pan from the heat. Puree everything afterwards with a blender.
