Stack on Sardines with Shiso Green Leaves

- Sansho Leaves
- Shiso Leaves Green
- Ghoa Cress
- Kaffir Lime Leaves
- Trout eggs
- Green apple
- Avocado
- Lime
- Pickled sardines
- Tempura mix
- Sparkling water
- Vinegar
- Sugar
- Ice cold water
Method
- Cut green apple into small cubes
- Make sugar water with sugar and ice cold water (ratio 1/1)
- Make sweet and sour with vinegar and ice cold sugar water (ratio 1/1)
- Soak diced green apple in sweet and sour juice
- Make circles from the Shiso Leaves Green
- Make a thin tempura mix with sparkling water
- Pass the Shiso Leaves Green rounds through the tempura mix and deep-fry until crispy
- Make a cream of the pickled Sardines with Shiso Leaves Green and Kaffir Lime Leaves powder
- Cut thin round slices from green apple and avocado
- Build the dish with layers of fried Shiso Leaves Green, apple and avocado and pipe the cream of pickled sardines between the layers
- Place the pickled green apple cubes and trout eggs on the dish
- Finish the dish with Sansho Leaves and Ghoa Cress
