Seared Coffee Marinated Filet of Pork with Salad of Cucumber and Nuts
Ingredients
(For 1 portion)
Coffee marinated filet of pork:
- ½ filet of pork
For the coffee marinade:
- 2 tbsp ground coffee
- 1 tbsp table salt
- 1 tbsp brown sugar
- 1 tbsp paprika powder
- 1/3 tbsp ground white pepper
- 1 tbsp ground cumin
Cucumber salad:
- Cucumber
- Shiso Purple
- Olive oil
Coffee Dressing:
- 1 tbsp white onion, chopped
- 150ml rapeseed oil
- 25g coffee
- ½ tbsp cider vinegar
- 1 tbsp golden syrup
Method
For the Coffee Marinade:
- Mix all ingredients together and roll the pork filet into the marinade. Leave to rest for one hour and cook in a non-stick pan. Leave to rest for 10 minutes and serve with a coffee dressing.
Cucumber Salad:
- Make some tagliatelle (finely sliced cucumber made with mandolin or potato peeler) with the cucumber and toss in roasted cumin seed and olive oil.
- Season to taste and sprinkle a punnet of chopped Shiso Purple cress over the salad.
Coffee Dressing:
- Chop the onions very finely. Crush the coffee beans in a mortar with a pestle until large granules form.
- Sweat the onions and coffee slowly in the rapeseed oil. Blend and pass through a chinois.
- Finish the dressing by mixing in the golden syrup and cider vinegar.
