Scrambled Egg Sandwich with Rock Chives

Ingredients

(For 4 people)

  • 4 Bread rolls
  • 6 Eggs
  • 150g Cherry tomatoes
  • 100g Crème Fraîche
  • 70g Butter
  • 2 tbsp. Sesame seeds
  • 1/2 cup Rock Chives®
  • 75 g Lamb’s Lettuce

Method

Put half of the butter in a saucepan on low heat (medium pit) and break the 6 eggs open. Stir well for about 7 minutes with a whisk while the pan is on low heat.

In between you can fry the sesame seeds until they are golden brown, use a separate pan. Fry the cherry tomatoes gently in another separate pan.

After about 5 minutes add the other half of the butter to the egg mixture and the 2 tablespoons of crème fraîche after about 7 minutes. Stir well and season with a bit of salt and pepper.

After stirring, add the soft Cherry tomatoes and the Rock Chives to the scrambled egg. Spread the bread rolls with a layer of crème fraîche, put your scrambled egg on top and sprinkle with a hand full of sesame seeds. Garnish this delicious sandwich with the lamb’s lettuce and the Rock Chives®.
