Plaice Filet with Mango Salsa, Pomegranate Juice and Soy Sauce
Ingredients
(For 1 portion)
Mango salsa:
- ½ mango cut into brunoise (cut into julienne strips, turn a quarter turn and dice again 1-2mm).
- ¼ of a red onion cut into brunoise1 passion fruit.
Sweet reduction of pomegranate juice and soy sauce:
- Pomegranate juice from 1 fruit
- ½ tsp. of brown sugar
- ½ lemon juice
- Soy sauce to taste
Method
Mango salsa:
- Mix all ingredients.
Sweet reduction of pomegranate juice and soy sauce:
- Blitz the fruit and pass it through a mousseline or chinois.
- Add the zest of lemon and sugar, reduce by half and season to taste with the soy sauce.
Serve:
- Place the mango salsa and Atsina® Cress on filets of plaice. Roll.
- Put the roll in a metal ring to hold its shape and steam for six minutes.
- Garnish with Honny® Cress and Ghoa Cress®.
