Ingredients
For 70 Magic Peach Stones (Pavoni silicone form):
- 300 g frozen peach pieces
- 50 g raw sugar
- 2 egg white
- 4 Sechuan Buttons
For 120 Magic Blueberry Drops (Pavoni silicone form):
- 300 g frozen blueberries
- 50 g raw sugar
- 2 egg white
- 4 Kaffir Lime Leaves
- 1/6 Planifolia Red Vanilla
Method
- Blizz the sugar with Sechuan Buttons for 3 seconds on step 8.
- Add the frozen fruits. Blizz it 5 seconds on step 10 .
- Scrape everything down from the edge with the spatula.
- Put 2 egg white on it, mix it for 5 seconds on step 5. place than the butterfly wing inside and keep it running for 2 minutes on step 5.
- Use piping bags to fill the Pavoni Forms, freeze it.
- Blizz the sugar with Kaffir Lime Leaves and a piece of Vanilla Red for 3 seconds on step 8 and sieve it.
- Add the frozen fruits and Kaffir Sugar in the Thermomix. Blizz it 5 seconds on step 10 .
- Scrape everything down from the edge with the spatula. Put 2 egg white on it, mix it for 5 seconds on step 5.
- Place than the butterfly wing inside and keep it running for 2 minutes on step 5.
- Use piping bags to fill the Pavoni Forms, freeze it.
- Serve everything on a Shiso Leaf Green, with Algea Powder Gold, Limon Cress and Bean Blossom.
Please note that these instructions assume you have access to a Thermomix device. If you do not have a Thermomix device, adjustments may be required.
