Clear Gazpacho with Sardines

- Tomato
- Cucumber
- Spring onion
- Motti Cress
- Rock Chives
- Sakura Cress
- Persinette Cress
- Morar Shoots
- Affilla Cress
- Sardines
- Nori sheets
- 3 colors of tomato
- Garlic
- Grape seed oil
Method
- Finely crush Rock Chives, tomato, cucumber, spring onion, Motti Cress and garlic in thermomixer
- Separate the pulp and juice using a cheesecloth
- Make an oil of Motti Cress by heating grapeseed oil, adding Motti Cress and finely turning it in the thermomixer
- Dice 3 colors of tomato
- Thinly slice cucumber and make rolls from it
- Season the sardines with Affilla Cress, Sakura Cress and Motti Cress and lightly roast
- Prepare the dish using a round mold
- Place the tomato cubes in the mold
- Place a nori sheet on top of this
- Pipe the pulp of tomato and cucumber onto the nori sheet and place on top of this the sardines
- Finish the dish with radishes, cucumber rolls, Sakura Cress, Morar Shoots and Persinette Cress
- Pour the clear juice of tomato and cucumber around the dish
- Drizzle oil of Motti Cress over the clear juice and serve
