On March 15, 2023, almost 300 guests from the Thuringian gastronomy in the historic Kaisersaal in Erfurt were treated to a very special event. Invited by the SB Union Erfurt, Spicehunter Marcel Thiele from Koppert Cress led through an inspiring 9-course menu, after an epic prelude by a singing moss lady aka Mother Earth, followed by wild berry vanilla salmon with Tasmanian pepper pearls, liquid salad, vegan tuna sashimi and caprese Deluxe, Mother Earth with Edible Stones, Tricolor Tahoon Tortellini with Mushrooms, Organic Chicken in a Cress Nest, Electrifying Truffle Praline and Original Beans Tartlets with Saffron Gel and Yoghurt Sponge.
In-depth knowledge of gastronomy, your true soul and purpose, and the place of plant-based ingredients in it - all of this was underpinned with motivating and inspiring context.
From A for Atsina Cress to V for vanilla - mind you, the first European vanilla - there was a lot for the guests. Whether restaurant owners, hoteliers, care & cure employees, caterers, chefs or master bakers - there was no lack of inspiration.
