Devils on Horseback

Ingredients and method

Ingredients

  • 1 punnet Olympia Cress
  • 5 stipes of bacon
  • Dried apricot – 5 each
  • Dried prunes – 5 each
  • 1 pinch linseeds
  • 1 pinch black sesame seeds

Method

  • Preheat your oven to 250°C (480°F).
  • Cut each stripe of bacon in half.
  • Roughly chop half of the Olympia Cress, reserving the other half for garnish.
  • Lay a half slice of bacon flat on a clean surface.
  • Place a prune on the center of the bacon slice.
  • Add a small amount of the chopped Olympia Cress on top of the fruit.
  • Carefully roll the bacon around the prune, securing it with a wooden toothpick or skewer.
  • Do the same thing with apricots.
  • Bake the Devils on Horseback in the oven for 8 to 10 minutes.
  • Sprinkle them while there are hot with black sesame seeds and linseeds.  
  • Transfer to a serving plate and serve with the remaining fresh Olympia Cress.
