Devils on Horseback
Ingredients and method
Ingredients
- 1 punnet Olympia Cress
- 5 stipes of bacon
- Dried apricot – 5 each
- Dried prunes – 5 each
- 1 pinch linseeds
- 1 pinch black sesame seeds
Method
- Preheat your oven to 250°C (480°F).
- Cut each stripe of bacon in half.
- Roughly chop half of the Olympia Cress, reserving the other half for garnish.
- Lay a half slice of bacon flat on a clean surface.
- Place a prune on the center of the bacon slice.
- Add a small amount of the chopped Olympia Cress on top of the fruit.
- Carefully roll the bacon around the prune, securing it with a wooden toothpick or skewer.
- Do the same thing with apricots.
- Bake the Devils on Horseback in the oven for 8 to 10 minutes.
- Sprinkle them while there are hot with black sesame seeds and linseeds.
- Transfer to a serving plate and serve with the remaining fresh Olympia Cress.
