Ingredients
(For 4 servings)
- 1 small watermelon
- 1 large cucumber
- 1 small red onion
- 150g feta
- Red Mustard Cress
- Daikon Cress
- extra virgin olive oil
- lemon juice or balsamic vinegar
- 20 g pine nuts (if desired)
Method
Cut the watermelon into cubes of about 1.5 cm. Remove the seed from the cucumber and cut it into cubes of about 1 cm. Cut the red onion into wafer-thin half rings. Crumble the feta into coarse pieces. Combine everything in a bowl, add the Red Mustard Cress and Daikon Cress. For this salad, make a simple dressing of extra virgin olive oil, lemon juice or balsamic vinegar with a little salt and pepper. Just before serving, pour over the salad.
Optionally add pine nuts for a crunch.
