Smoked Pink Fir Apple with Zucchini and Guanciale

Smoked Pink Fir Apple

  • Pink Fir Apple potatoes
  • Salt and pepper

Zucchini & Guanciale

  • Zucchini
  • Guanciale
  • Tahoon Cress

Method

Smoked Pink Fir Apple

  • Preheat the Big Green Egg to 150 degrees Celsius.
  • Cook the Pink Fir Apple potatoes in the charcoal.
  • Let them cool. Peel the potatoes and mash them into a nice salad.
  • Season with salt and pepper.

Zucchini & Guanciale

  • Cook the zucchini and guanciale on the Big Green Egg.
  • Serve as shown in the photo with Tahoon Cress.
