Ingredients
(For 4 people)
- 1.2kg of tomatoes
- 1 winter carrot
- 1 piece of ginger (about 2 cm)
- 2 stalks of celery
- 3-5 shallots
- 1 cup of RucolaCress®
- 1 tsp Chili flakes
- 10 stalks of thyme
- 2.5 tablespoons of mascarpone
Method
Cut the shallots, tomatoes and celery. Grate the ginger and the carrot roughly and add all ingredients to a soup pot. Add 100 ml of water and cook for about 25 minutes. Add the thyme and 1 teaspoon chilli flakes to the soup during cooking. Add the mascarpone after 25 minutes and remove the pan from the heat. Puree everything afterwards with a blender.
