Niçoise salad
Ingredients
(For 4 portions)
- 160g cooked green french beans
- 3 hard boiled eggs
- 160g cooked potatoes
- 12 cherry tomatoes
- 60g pitted black olives
- 160g cooked tuna in brine
- 1 punnet Daikon Cress
- 4 tbsp olive oil
Method
- Cut the cherry tomatoes in half, cut the hard-boiled eggs into wedges, cut the small potatoes into two, cut the French beans into two and place in a mixing bowl.
- Add the tuna, add cut a punnet of Daikon Cress and fold the salad gently with 4 full tablespoons of good olive oil.
- Serve immediately.
