Entrecote, Sauerkraut, Candied Potato, Zorri Cress and Sweet Peeper

Ingredients

  • Lupine Cress
  • Sweet Peeper
  • Zorri Cress
  • Sauerkraut
  • Small red, yellow and white onions
  • Entrecote
  • Cream of sweet potato
  • Compote of shallot and fig
  • Candied potato
  • Oil of Tahoon Cress
  • Sauce of shallot

Method

  • Fry the red, yellow and white onions briefly
  • Fry the entrecote until pink in color
  • Then brown the various mushrooms in the entrecote's cooking juice
  • Make a swipe of cream of sweet potato on the plate
  • Fill a round mold with sauerkraut
  • Complete the mold with the slices of entrecote, cream of sweet potato and various onions
  • Fill the onions with compote of shallot and fig
  • Place the candied potato around the dish
  • Finish the dish with fresh Lupine Cress, Zorri Cress, Sweet Peeper and the mushrooms
  • Drizzle shallot sauce and Tahoon Cress oil over and around the dish
