Ingredients and method
Shaved ice
- 1200 grams of water
- Pour the cold water into a 5 liter liter liter measure and place it in the freezer
- When completely frozen, unload the ice and place in the shaved ice machine
- Shave the ice onto a frozen plate
Absinth syrup
- 100 grams of yellow absinth, unsweetened version
- 400 grams of water
- 90 grams of granulated sugar, standard
- 50 grams of glucose syrup, 42DE
- 10 grams granulated sugar
- 3 grams of agar
- Mix all ingredients except the second sugar and the agar together in a saucepan
- Bring this mixture to a boil and meanwhile mix the second sugar with the agar
- Add the agar to the boiling mixture and keep it boiling for 2 minutes
- Now pour everything out and cool back down
- Pour the cold syrup over the shaved ice
