Ingredients and method

Shaved ice

  • 1200 grams of water
  1. Pour the cold water into a 5 liter liter liter measure and place it in the freezer
  2. When completely frozen, unload the ice and place in the shaved ice machine
  3. Shave the ice onto a frozen plate

Absinth syrup

  • 100 grams of yellow absinth, unsweetened version
  • 400 grams of water
  • 90 grams of granulated sugar, standard
  • 50 grams of glucose syrup, 42DE
  • 10 grams granulated sugar
  • 3 grams of agar
  1. Mix all ingredients except the second sugar and the agar together in a saucepan
  2. Bring this mixture to a boil and meanwhile mix the second sugar with the agar
  3. Add the agar to the boiling mixture and keep it boiling for 2 minutes
  4. Now pour everything out and cool back down
  5. Pour the cold syrup over the shaved ice
