Crunchy Sushi Rice, Pistachio Pasta, White Chocolate Mousse and Blood Orange

Ingredients
- Sushi Rice
- Planofilia Green - Vanilla
- Paztizz Tops
- 250 gr pistachio nuts
- Blood orange
- Pistachio nuts
- White chocolate
Method
- Make a round of sushi rice and bake crispy
- Cook Planifolia Green in sugar water
- Make a paste of pistachio, olive oil, powdered sugar and the Planifolia Green cooked in sugar water
- Mix some of the pistachio vanilla paste with white chocolate mousse
- Lightly roast segments of blood orange
- Make a crumble of baked white chocolate and pistachio
- Place the crispy fried sushi rice on the plate
- Spread the paste around the crispy sushi rice
- Top with a quenelle of chocolate mousse
- Finish the dish with the white chocolate and pistachio crumble, segments of blood orange and Paztizz Tops
