Beet and Berries

Ingredients

• Blackberries
• Watermelon
• Raspberry
• Balsamic
• Honey
• Sugar
• Vinegar
• Beet
• Blueberry
• Codium Blue
• Scarlet Cress

Method

• Make a mousse of raspberry
• Drill balls of beet with the pariesenne drill and marinate in balsamic and honey
• Bake blind puff pastry
• Cut a larger round and a smaller round from the baked puff pastry
• Place the cookie on the plate
• Pipe the mousse on the cookie
• Place the marinated beet and blackberries
• Place a smaller cookie on top
• Add blueberries
• Finish the dessert with Codium Blue and Scarlet Cress
