
Watermelon, Pepquiño, Vene Cress

Ingredients
- Watermelon
- Pepquiño
- Vene cress
- Beet juice
- Vodka
- Red onion
- Zallotti Blossom
- Sugar water
- Vinegar
Method
- Using a parisienne drill, turn small balls out of the watermelon
- Blend the watermelon slices together with the beet juice and some vodka
- Infuse the watermelon balls with the juice
- Make sweet and sour by adding sugar water and vinegar (ratio 1/1)
- Puree the infused red onion with Zallotti Blossom and sweet and sour until a single mass is obtained.
- Put the mixture in a piping bag
- Dress the plate and top with Vene Cress
