Watermelon, Pepquiño, Vene Cress

Ingredients and method


  • Watermelon
  • Pepquiño
  • Vene cress
  • Beet juice
  • Vodka
  • Red onion
  • Zallotti Blossom
  • Sugar water
  • Vinegar


  • Using a parisienne drill, turn small balls out of the watermelon
  • Blend the watermelon slices together with the beet juice and some vodka
  • Infuse the watermelon balls with the juice
  • Make sweet and sour by adding sugar water and vinegar (ratio 1/1)
  • Puree the infused red onion with Zallotti Blossom and sweet and sour until a single mass is obtained.
  • Put the mixture in a piping bag
  • Dress the plate and top with Vene Cress
